Diplomat Roulade


This cake reminds me of hot summers in Timisoara, Romania. My birthday is in July, and I knew that my two options for a birthday cake would be either ice cream cake or diplomat cake (which everyone would enjoy). Its history is unclear, but the name originated when French leaders served the cream which was reserved for special occasions.


This year for my husband’s birthday, I wanted to create the perfect birthday cake that he would love. This cake is very refreshing: a very light diplomat cream loaded with tropical fruits. Diplomat cream is a mixture of equal parts creme patisserie and unsweetened whipping cream… it is the best cake to serve on a hot summer day! I know it is not summer yet, but my husband is an island boy and his favorite dessert cannot be too sweet and has to contain refreshing elements in it like the fruits.


This cake is very similar to a Charlotte cake: they are both made with homemade custard, whipped cream, sponge or ladyfingers, and lots of fruits. There are endless versions of this cake, and you can fill and top it with candied, dried, or canned fruit. Happy birthday my love, and many more to come. I love celebrating your birthday and being able to surprise you from time to time. You are the world to me and I am lucky to call you mine.
