Ciorba de Burtă (Sour Tripe Soup)


This delicious ciorba de burtă might be a traditional dish in Romania, but it clearly originates from the Ottoman Empire (Turkey). It is a very common dish in the Balkans (Southeastern Europe and the Mediterranean). I’ve been told before that this soup could be a hangover remedy, but I haven’t tested that theory. The way that we make it in Romania is a little different from the methods used in the rest of the Balkans. This sour soup is made creamy by sour cream, rich from egg yolks, garlicky, and gets its color from grated carrot. This is a soup that my family didn't make very often at home, and I only had it when visiting other family members or when I went out to a restaurant. It is a soup that is very sophisticated and the recipe has a lots of steps, which are time consuming.
