Kulfi (Indian ice cream)


Kulfi looks like an ice cream but is more dense and creamier. The word Kulfi is derived from the Persian word Qufli, which means “covered cup”. This delicious frozen dairy dessert originated in the 16th century. This recipe is not very sweet, and I think I like it better for being less sweet. I was told that Kulfi can be very sweet since most recipes contain condensed milk and / or evaporated milk (most Indian desserts are rich and very sweet).


There are so many flavors for Kulfi, but the most traditional is cardamom and pistachio. You cannot go wrong with cardamom, saffron, rose petals or dried fruit. It is completely up to you and your preferences how you approach this frozen treat. The recipe that I am presenting is not the fastest one to execute, but when it comes to tradition and flavors, I say do not cut corners. This dessert requires patience; cutting corners will not give you the same results and this is worth the effort.
